Cupcakes in a Jar!

Cupcakes are the rage these days!
Put CUPCAKES IN A JAR and it takes a simple cupcake to a whole new level!
They are quite easy to make and people LOVE the visual effect!

What you will need:

  • 12 Mason jars (I used 16 oz jars)
  • 24 Cupcakes (without the liners)
  • Ribbon, printable cutouts, stickers, scissors, hot glue or two sided tape, paper and/or material.
  • Enough icing for 24 cupcakes 
  • A piping bag and a frosting tip of your choice (or a zip-lock bag with the corner cut of)

Directions
  • Make your cupcakes and let them cool 
  • Make your frosting (see my favorite recipe below) OR use a store bought brand
  • Open up all of your jars
  • Attach a label of your choice to the lid of the jar (to cover up the mason jar writing). Create your own labels or find free printable labels online
  • Put one cupcake in each jar
  • Top each cupcake with plenty of  frosting (I pipe my frosting because it is easier to get the frosting in the jar this way, you can also use a zip-lock bag).
  • Place another cupcake in the jar on top of the frosting
  • And then nicely pipe frosting on the top cupcake (do not fill the icing up too high)
  • Add sprinkles or candies
  • Close up your jar and add ribbons or material and a fork!

What a perfect gift for a special occasion!!

BUTTERCREAM FROSTING: Beat together two sticks of softened butter, slowly add in 4 cups of powdered sugar, 1 tsp of vanilla, a pinch of sea salt, 2-4 Tbsp of milk as needed and 1/4 cup coco powder (if you want chocolate frosting).

Building Self Esteem

The kitchen is a GREAT classroom for children!  Every time you invite them to cook or bake with you; you are giving them the opportunity to work on reading, math and motor skills.

Did you know that kids are more likely to try new foods if they have the opportunity to help you make it? I once had a girl in one of my cooking classes that insisted she was "allergic to salad", this of course, was absolutely adorable to me, but after making the salad she decided she wasn't really "allergic" after all!

Kids LOVE to be in the Kitchen!

Here is a simple "go to" recipe that you can easily make with your kids.
It only requires 6 ingredients, 1 pot and about 15 minutes of your time.


CHOCOLATE PEANUT BUTTER NO BAKE COOKIES!!!

They taste SO good!

Ingredients

1/2 cup of butter (or non-dairy Earth Balance)
1/2 cup of milk (or soy/almond milk)
1/2 cup of coco powder
2 cups of Sugar
1/2 cup of peanut butter (or almond butter)
3 cups of old fashioned oats

Directions

Put butter, milk, coco powder and sugar into a pot and on medium/low heat! Melt everything together stirring constantly and then let it come to a boil for about 2 minutes. Remove from heat. Stir in peanut butter and oats. Then use a cookie scoop to spoon out your cookies onto parchment paper!  Let them cool and harden up and ENJOY!
Note: I like to put them in the refrigerator to cool in order to speed up the process, plus I like to eat them cold, but you can also leave them out at room temperature if you prefer.
